St David’s Dairy milk is sourced from carefully selected farmers, from the rolling hills of Gippsland, just 100kms from the factory door. The farms are low intensity, with over 2 acres of pasture per cow. The milk is collected each day in a custom made small milk tanker, and processed in Fitzroy. The cream is allowed to ferment gently before churning resulting in a slightly sour, rich, creamy butter.
