A small oval shaped goat cheese ripened with a salted charcoal coating. The interior is smooth and pristine white with a fine granular texture. A young Délice has a fresh, ‘citrusy’ tang on the palate with nutty and yeasty flavours developing as it matures. The ash gives it an earthy flavour.
